Uji remains the cultural epicenter for traditional tea production in Japan. With hundreds of years of history Uji's influence has spread globally. Today, most tea produced in the region is quite orthodox leading one to believe innovation might not be the strong suit of the region. But taken from a historical view, Uji has proved one of the most progressive tea regions in Japan with Sencha, Tencha and Gyokuro all having been developed there. In this class we will look at Uji through the historical lens as well as explore some of Uji's most renowned producers working today.
