Description: One of our favorite cultivars from one of our most beloved producers - Yamakai. We have been sourcing this particular tea for 5 years and each year it fails to disappoint. The tea maker refers to the bushes that produce our Yamakai as "Kettl's Tea" as we buy the entire lot every year. Made in the orthodox style of Shizuoka mountain teas, Yamakai is light steamed with stunning needle shaped leaves and concentrated dry leaf aroma that can only be described at "the scent of the mountains". Yamakai will develop over multiple steepings making this a wonderful tea to sit with for a longer session. This is hand made, small batch tea at its best and is a wonderful glimpse into the character and quality of the mountain style Sencha of Shizuoka

What is so special about this tea? Yamakai is a unique cultivar that was created in the 1960's - a relative of Yabukita. You'll notice the leaf size is quite large and thick. The tea plant is famous for producing a rich umami characteristic - especially when produced in Kyushu - but in the case of this tea, it is more restrained having been grown naturally deep in the mountains of Shizuoka. We love the deep and sustained fragrance of this years tea - it also produces a somewhat fruity profile, especially when brewed with room temperature or slightly chilled water or sparkling water (you have to try!). This tea takes a little practice to perfect the brewing but enjoy the process of discovery!

Recommended for: A wonderful example of a style of tea that can only be found in the Mountains of Shizuoka.
