Jiro Katahira is one of the most revered producers working in Shizuoka today having developed a reputation for meticulous farm maintenance and processing. His presentation of the Yabukita cultivar, which comprises over 80% of the prefecture's yearly output and is known for its intoxicating floral aroma, is nothing short of stunning. Shaded by indirect covering for 12 days prior to hand harvesting, this tea showcases everything we love about Jiro san's approach to production and the Yabukita cultivar—a decadent texture, deep green hue, and intense florals balanced by rich umami.

Shincha is an indicator of the arrival of spring, and this young, fresh green tea is sold for only a small window of time, roughly one month. We're selling our 2025 selections as pre-orders, launching them as soon as the teas are being harvested. Domestic pre-orders will ship as soon as the tea arrives in our Brooklyn warehouse—typically within 10 days of launch.
