We are excited to announce that Chef Trigg Brown and Pastry Chef Danielle Spencer of Win Son will be the next residents in our Kettl Studio Chef Series. Known for their distinct and creative Taiwanese-American perspective, Win Son brings a deeply personal and expressive approach to cooking—one that resonates with our own exploration of the intersection of tea, cuisine, and craft. Brown and Spencer, along with co-founder Josh Ku will be joining Kettl founder Zach Mangan on Friday, April 24th, for 2 private seatings, each limited to just 12 guests, for a special tasting menu developed alongside tea pairings from Kettl's catalog, limited bottlings, and Zach's private collection.

In 2016, Trigg Brown and Josh Ku opened Win Son restaurant in Bushwick. The restaurant is named after Ku’s grandfather’s former textile company and is based on a friendship that centered on Taiwanese American food in Flushing and their travels to Taiwan. In 2019 and 2020, Brown was shortlisted for James Beard Awards and earned a StarChefs Rising Stars Award. Brown was also named a Food and Wine Best New Chef in 2020. The duo opened Win Son Bakery, a more casual Taiwanese cafe, in the summer of 2019 with pastry chef and partner Danielle Spencer. Brown, Ku, and Spencer opened an East Village location of Win Son Bakery in March 2025.

This event will be held at our private Kettl Studio space, located at 64 Meserole Avenue, Floor 2, Brooklyn, NY 11222. This space is not accessible to the public outside of specified event hours.
