The teas produced by Jiro Katahira on his property high in the mountains of Shizuoka have developed a cult following. Incredibly expressive and elegant, they present a unique expression of terroir in Japanese tea and masterful execution. After focusing solely on sencha and loose tea production, Katahira-san has turned his eye to experimenting with matcha. The early results were promising, but yields were too small to offer anything beyond a glimpse of potential. In 2025, the quality and output from Katahira-san's farm presented a leap forward, and we were eager to secure the entirety of his first matcha offering—only 100 tins. Made entirely from the Okuyutaka cultivar and prepared with peerless craftsmanship, this tea is a refined and delicate presentation of high mountain flavor—subtle nori notes are backed by a lingering sesame finish.

Preparation

Usucha

In a tea bowl, add 2g of sifted matcha and 65ml of hot water (180°F). Vigorously whisk the matcha in a "Z" pattern with a bamboo whisk until a fine foam appears.

Iced Matcha

Add 2g of sifted Matcha to a tumbler or thermos, add 200ml of cold filtered water and shake vigorously for 30 seconds. Pour over ice.

Jiro Katahira is one of the most revered producers working in Shizuoka today, having developed a reputation for meticulous farm maintenance and processing. His single cultivar sencha and kabuse offerings are some of the most in-demand in our catalog, only appearing for a brief moment in the early season. Katahira-san has been experimenting with matcha production recently as well, and the early results are as expected—terroir-driven and refined. It's a true pleasure to steward these teas, which stand alone in our curation as single representations of high mountain Shizuoka teas.
