This particular selection is made from Yabukita, a classic cultivar known for its fragrant and balanced profile. The kamairicha processing that Kayashita san deployed, which uses dry heat in place of steam to halt the oxidation process, highlights those aromatic complexities and yields a cup that is delicate and remarkably drinkable.
