Super Easy, Super Delicious Matcha Green Tea Ice Cream in 5 steps

We love green tea and we love sweets - and while we can't claim we love every dessert utilizing matcha, we absolutely, unabashedly love matcha green tea ice cream. We thought it would be fun to share a simple and satisfying green tea ice cream recipe that we use at home [this recipe is modified from the book 老舗に教わる抹茶おやつ]. We use a small ice cream maker but you can also get along just fine without one. We love using our Hukuju Matcha for this recipe - the color and aroma really shine. (Are you new to Matcha ? What You Will Need To Make Matcha Green Tea Ice Cream

Ingredients for 5 servings

  • 3 room temperature egg yolks
  • 80g granulated sugar
  • 15g sifted matcha
  • 250ml heavy cream

Step 1

Combine the egg yolks and sugar and mix well for a few minutes. You want the yolks and sugar to fall in "ribbons" from the whisk - this is a sign the texture is where it needs to be.

Step 2

In a separate bowl, combine the heavy cream and sifted matcha and gently stir until they are fully integrated.

Make sure to work out any clumps of matcha.


Step 3

Combine all ingredients from both bowls

Mix well and pour into either an ice cream maker, or a cold metal bowl.


Step 4

If you do not have an ice cream maker, put the metal bowl with ice cream into the freezer and allow to sit for several hours. If you do have an ice cream maker, allow it to mix for about 20 - 25 minutes, or until mixture has solidified. Once the texture is correct, transfer the green tea ice cream to the freezer for several hours.

Step 5

After the matcha green tea ice cream has set, devour it before you have to share with anyone. Or, be a hero and serve to your friends and family :)
