The first time you taste gyokuro prepared as intended, using a high concentration of leaf, cool water, and a first infusion measured in drops rather than cups, its place within Japanese tea becomes easier to understand. Few teas reveal the decisions made in the field as clearly as gyokuro tea. The weeks of shading before harvest, the reduced yields, and the narrow harvesting window all remain visible in the brewed tea. Its price is often the first thing people notice, but the tea itself explains why it exists.
For those wondering why gyokuro is expensive, the answer begins long before the leaves are harvested. The cost is not the result of branding or rarity alone. It is the direct consequence of deliberate choices made by producers, often at the expense of yield, efficiency, and scale.
What Is Gyokuro?
Before exploring why gyokuro commands such a premium price, it helps to understand what makes it different from other Japanese green teas.
Gyokuro is a shade-grown tea produced primarily in Uji, Kyoto, and Yame, Fukuoka and more recently in parts of Kagoshima of Shizuoka.. Unlike sencha, which grows in full sunlight, gyokuro is covered for roughly three weeks before harvest. During this period, producers reduce the amount of sunlight reaching the plants, fundamentally changing how the tea develops. The result is one of Japan’s most distinctive teas and, for many, its most refined expression of umami. Among Japanese premium tea categories, gyokuro occupies a unique position. It requires more work in the field, produces less tea, and demands greater precision during harvest and processing than most green teas.
Not All Gyokuro Is the Same
As mentioned, gyokuro comes from four main regions: Uji in Kyoto, Yame in Fukuoka, and select areas of Shizuoka and Kagoshima..
Uji is where the modern method of gyokuro production was established during the nineteenth century and remains home to some of Japan’s most celebrated producers. Yame now accounts for a significant portion of total gyokuro production and has become known for teas with remarkable sweetness and depth. The most compelling gyokuro teas tend to come from producers who have spent decades refining a single approach to a specific piece of land. Small adjustments to shading, cultivar selection, harvest timing, and processing can dramatically influence the finished tea. These are decisions that are difficult to standardize and even harder to scale.
When people search for the best gyokuro tea, they often discover that the category itself is highly diverse. Region, cultivar, farming philosophy, and processing choices all contribute to what eventually arrives in the cup.
In late April, approximately three weeks before the first flush harvest, producers begin covering their fields.
The process is labor-intensive. Support structures must be installed, covering materials positioned, and light levels carefully monitored. Traditional producers may still use layered reed screens and straw coverings known as Honzu, while others employ modern mesh systems called Kanresha that are easier to manage. Regardless of the approach, the objective remains the same: reduce sunlight by approximately 85 to 90 percent.
This is where the story of gyokuro price truly begins.
When sunlight is restricted, the tea plant changes its behavior. Chlorophyll production increases as the plant attempts to capture what little light remains. The leaves become noticeably darker, developing the deep green appearance associated with high-quality gyokuro. The leaf also reached out in search of any available sunlight, making the leaf thin and soft - perfect for crafting high-grade tea.
Most importantly, the chemistry of the leaf changes. Under normal growing conditions, tea plants gradually convert amino acids such as L-theanine into catechins through photosynthesis. L-theanine contributes sweetness and umami, while catechins provide structure, bitterness, and astringency.
By reducing sunlight, producers slow this conversion. Amino acids accumulate within the leaf rather than transforming into catechins. The result is the gyokuro flavor profile that has made the tea famous: concentrated umami, pronounced sweetness, remarkable depth, and comparatively little astringency.
Tasted alongside sencha, the distinction is usually apparent even to people with little experience drinking Japanese tea. Sencha often emphasizes freshness, structure, and brightness. Gyokuro shifts the balance toward sweetness, density, and umami. The weeks spent under shade are responsible for much of that difference.
The additional labor involved in shading is only part of the equation. Shading also reduces yield. A shade-grown tea plant produces less harvestable leaf than one grown in full sunlight. The plant receives less photosynthetic energy, resulting in slower growth and lower overall production. A producer growing sencha can generally harvest significantly more tea from the same amount of land than a producer committed to gyokuro. Harvest introduces another challenge. The highest grades of gyokuro are often harvested by hand, with workers selecting only the youngest and most desirable shoots during a narrow spring window. This level of selection requires experience, precision, and labor that cannot easily be replaced by machinery.
The highest grades of gyokuro can command prices many times higher than comparable sencha, particularly when production volumes are small, and harvesting is done by hand. For producers, the decision to grow gyokuro means accepting lower yields, greater labor requirements, and substantial investment in infrastructure. The price of the finished tea reflects those realities.

The brewing parameters differ significantly from those used for sencha:
Water Temperature: 50–60°C (122–140°F)
Leaf-to-Water Ratio: Higher than most green teas - we suggest starting with 5g of leaf and roughly 50cc of water. For the highest grades of gyokuro, you can use less water - 30cc or so.
First Infusion: 90–120 seconds
The first pour is often surprisingly concentrated, producing only a small volume of liquor with remarkable sweetness and depth.
For subsequent infusions, increase the water temperature slightly and shorten the steeping time. Each infusion reveals a different aspect of the tea. The first may emphasize sweetness and umami, while later steeps often reveal greater freshness, structure, and aromatic complexity.
