Shirakawa Legacy is our first large format matcha from the famed Tsuji family in Shirakwa, Uji. A piercing freshness and baked nutty aroma greet you at first sip. The deep verdant color of the matcha comes from 25 days of shading prior to harvest, the fine texture from low RPM milling on a traditional stone mill. Shirakawa Legacy is our pinnacle latte matcha suitable for whisking on its own, crafting a decadent matcha latte, or shaking with ice for a frothy, refreshing iced matcha.

This field blend from Shirakawa is made with hand harvested, first flush Yabukita, Samidori and Saemidori varietals.

Preparation

Hot Latte

Combine 4g of sifted matcha with 50ml of hot water. Vigorously whisk the matcha in a “Z” pattern until a fine foam appears (approx. 15-20 seconds). Steam 240ml of Milk (Oat milk / Nut Milk). Combine, stir, and serve

Iced Latte

Combine 4g of sifted matcha with 50ml of hot water. Vigorously whisk the matcha in a “Z” pattern until a fine foam appears (approx. 15-20 seconds). Pour 150ml of milk or non dairy milk into a glass with ice. Pour whisked Matcha into the glass. Stir and enjoy.

Iced Matcha

Add 2g of sifted Matcha to a tumbler or thermos, add 200ml of cold filtered water and shake vigorously for 30 seconds. Pour over ice.

Usucha

In a tea bowl, add 2g of sifted matcha and 65ml of hot water (180°F). Vigorously whisk the matcha in a "Z" pattern with a bamboo whisk until a fine foam appears.

The Tsuji Family

There may be no name more synonymous with Uji Matcha than Kiyoharu Tsuji. He is among the most decorated producers in all of Japan, with multiple first-place winning submissions to the national tea fair, and has become the most recognizable name outside of Japan. Our relationship with Tsuji-San is a storied one, as he was the first producer to represent Uji in our catalog, and Kettl was the first partner to bring his teas to the international stage.

In the intervening years, Kiyoharu Tsuji's production has expanded beyond just pinnacle grade, single cultivar matcha offerings to include blended matcha and houjicha. Koki Tsuji, Kiyoharu's son, has joined his practice and taken the lead on one of Kettl's core offerings—Shirakawa Legacy. We are honored to work with one of the pioneers of modern matcha and the next generation of emerging voices.
