Miyabi is our flagship sencha. This medium steamed tea is produced in the mountains of Okuyame. At this elevation, the tea plants are exposed to direct sunlight during the day and cool nighttime temperatures. These dynamic conditions slow plant growth and concentrate flavor. After harvest, the tea goes through the traditional firing process known as "hiire" which imparts the quintessential toasted quality Yame sencha are known for. The resulting cup possesses a vibrant freshness packed with sweetness, a deep nuttiness reminiscent of toasted hazelnuts, and a rich body with very low astringency.
