This house roasted houjicha is made from an asamushi, or light steamed, sencha from the Ikeda family in the Satsuma region of Kagoshima. Teas from the southern tip of Kyushu are known for their expressive verdancy and crisp character. There is a clarity to light steamed teas that allows the natural flavors of the leaf to shine, which also makes them the perfect basis for houjicha. In the cup, we find notes of baked apple, toasted rice, and light spice.
