This Asamushi, or light steamed, sencha comes to us from the Ikeda family in the Satsuma region of Kagoshima. Teas from the southern tip of Kyushu are known for their expressive verdancy and crisp character, and while often deep steamed, the regional profile is extenuated here by the delicate steaming deployed by the Ikeda family. There is a clarity to light steamed teas that allows the natural flavors of the leaf to shine, and in the cup, we find a light and toasty profile backed by a delicate sweetness and gentle umami.
